What does it take to achieve the 'perfect score' from the county health department?

Patch compiled the scores based on information provided by the through a Freedom of Information request.

A 'perfect' score doesn't exactly denote perfection--each establishment is visited multiple times per year, and scores can fluctuate depending on a number of factors. Domino's, KFC-Taco Bell, Lisle Lanes, Maple Avenue Pub, and Passero's all received demerits on a 2011 inspection.

Three establishments whittled down demerit scores as inspectors completed follow-ups throughout the year.

Chinn's, the Ginko Room and El Burrito Mexicano were all cited for the presence of flying insects and storing food on the floor, among other citations, in early 2011 inspections.

The Ginko Room received demerits for storing a sanitizer bucket next to coffee, using crates as storage shelves, keeping wiping cloths on countertops, and exposing single service items to customers without a dispenser.

Inspectors revisited the Ginko Room on June 22 after a power outage and determined the area was violation-free.

On Aug. 12 inspectors deducted points from Chinn's Fishery for storing raw eggs and fish near vegetables in the cooler, storing a santizier bucket next to coffee, damaged floor tiles, a leaking ceiling and missing thermometers from reach-in coolers. Throughout two subsequent inspections on Aug. 23 and 31, inspectors determined that all of the violations has been corrected.

Inspectors found raw chicken and beef contaminated, unlabeled food, and uncovered food in the cooler; they also made a 10-point deduction for the presence of an unapproved pesticide at El Burrito Mexicano in early July. Owners addressed the items of concern in time for their next inspection.
